BREWING ADVICE

Peak flavor is typically reached between 2 and 6 weeks post-roast, when the coffee has fully opened up and its sweetness, clarity, and complexity are at their best.

All Moja coffees are roasted light to highlight their natural sweetness, clarity, and character. They can be brewed using any method depending on your preference, though we recommend brewing this coffee as Filter / Pour Over for the best expression of its profile.

THE PRODUCER

Gerald balances his career as an accountant with managing Kambarare, his 1,800-tree farm near Mt. Kenya. His curiosity stands out through his work with washed, honey, and natural processing, always experimenting and pushing for better quality.

Peter introduced us to Gerald during our visit to Kamavindi, and Kambarare has since become an important part of Moja’s Kenyan story. Our relationship is built around supporting a producer whose resilience, ambition, and openness closely reflect what Moja stands for.

At Moja, partnering with Gerald is about more than sourcing coffee, it’s about standing beside growers who balance passion, perseverance, and progress.

This lot from Kambarare is carefully harvested in selective picking rounds, with cherries collected every 14 days to ensure each pass captures coffee at the right stage of ripeness.

After harvesting, the coffee is pulped on the same day, then fermented in plastic barrels for 36 hours. Once fermentation is complete, the coffee is fully washed and moved to raised African beds for drying. During the early stages of drying, the lot is hand-sorted to remove any visible defects and improve overall cup quality.

Drying takes approximately 12 to 16 days, depending on the weather conditions, allowing the coffee to dry slowly.

The above breakdown is a first step in the right direction to make that process more transparent to the consumer. It shows that the cost of high quality coffee reflects real work, real logistics, and real risks taken along the way.
