This lot comes from Finca La Increíble in La Esperanza, Antioquia, owned and run by Norman Eusse and his family. Since 2015, Norman has been deeply committed to refining quality on his farm, understanding that exceptional coffee begins with careful cherry selection and consistency in process. Through years of observation and experimentation, he developed a rigorous approach to harvesting, ensuring that only fully ripe cherries are used.

Finca La Increíble is a place driven by patience and precision, where every step is treated as an opportunity to elevate flavor. Norman’s work shows how dedication and craftsmanship can transform a classic Colombian variety into something expressive and distinctive.

This Castillo lot follows a signature, heavily controlled natural process designed to build depth and complexity:

Ripe cherries are first carefully sorted and cleaned, then placed in breathable mesh bags for 48 hours of aerobic oxidation, encouraging fruit-forward and aromatic development. They are then transferred into sealed tanks for 48 hours of anaerobic fermentation, where natural yeasts intensify sweetness and create rich, wine-like layers.

The coffee is dried slowly over 30 days in handmade marquesinas, a necessary step at 1,900 meters above sea level to ensure stability and clarity in the final cup.

The result is a bold expression of fermentation, pushing Castillo beyond its typical profile into something more vibrant and layered.
