BREWING ADVICE

Peak flavor is typically reached between 2 and 6 weeks post-roast, when the coffee has fully opened up and its sweetness, clarity, and complexity are at their best.

Wilder Lazo’s story begins far from coffee. Trained as a veterinarian specializing in livestock, he returned home to San AdolfoHuila in 2016 when coffee prices fell and his father became ill. What started as a family duty soon became a mission, rebuilding and reimagining Finca La Dinastía into one of the most forward-thinking farms in the region.

Wilder applies a scientific approach he calls “precision agriculture,” studying soil composition and using targeted nutrients to keep every tree in balance. His curiosity and data-driven mindset have made La Dinastía a model for innovation and controlled fermentation in Huila.

This lot is a Pink Bourbon, Red Honey processed coffee, fermented for 60 hours anaerobically in mucilage before being dried for 12 days on raised beds. The honey process accentuates sweetness and body, while the controlled fermentation builds balance and texture, a beautiful intersection of science and tradition that defines Wilder’s work.
