Wilder Lazo’s story begins far from coffee. Trained as a veterinarian specializing in livestock, he returned home to San Adolfo, Huila in 2016 when coffee prices fell and his father became ill. What started as a family duty soon became a mission, rebuilding and reimagining Finca El Rubíinto one of the most forward-thinking farms in the region.

Wilder applies a scientific approach he calls “precision agriculture,” studying soil composition and using targeted nutrients to keep every tree in balance. His curiosity and data-driven mindset have made El Rubía model for innovation and controlled fermentation in Huila.

This Chiroso lot follows a washed process with an extended 100-hour anaerobic fermentation in the mucilage. After pulping, the coffee is submerged and fermented in sealed conditions, allowing controlled microbial activity to develop clarity, aromatic intensity, and refined acidity. It is then dried slowly for 20 days on raised beds, ensuring stability and precision in the final profile.

The long anaerobic fermentation enhances the natural character of the Chiroso variety while preserving its elegance and floral structure.
